Main Ingredients
- ¾ cup plain Greek yogurt (non-fat preferred)
- 1 cup self-raising flour (or plain all-purpose flour)
- 1 teaspoon baking powder (only if using plain all-purpose flour)
- Pinch of salt
- Olive oil spray for cooking
- Mix Dry Ingredients: In a large bowl, combine the flour and a pinch of salt. If using plain all-purpose flour, add the baking powder as well and stir to distribute evenly.
- Add Yogurt and Form Dough: Add the Greek yogurt to the flour mixture and stir with a wooden spoon. Then, use one hand to mix everything until it comes together into a rough ball of dough.
- Knead the Dough: Transfer the dough onto a clean, lightly floured surface. Knead the dough for 3 to 5 minutes until you achieve a smooth ball. If the dough feels sticky, sprinkle a little more flour as needed. Let the dough rest for 10 minutes afterward to relax.
- Divide the Dough: Cut the rested dough into 4 equal pieces and roll each piece into a ball.
- Roll Out Flatbreads: Dust the surface with flour and, using a rolling pin, flatten each dough ball into a circle approximately 16-18 cm (6-7 inches) in diameter. Be sure to sprinkle flour on the dough and flip it upside down occasionally while rolling to prevent sticking.
- Heat the Pan: Place a pan over medium-high heat and spray it lightly with olive oil spray or brush with oil.
- Cook the Flatbread: Place one rolled-out dough circle onto the hot pan. Cook for 2 to 3 minutes until bubbles start to form on the surface. Lift a corner to check if the underside is golden brown.
- Flip and Finish Cooking: Carefully flip the flatbread using a spatula and cook the other side for 1 to 2 minutes until it puffs up and turns golden brown. Remove from the pan when done.
- Keep Warm and Serve: Transfer the cooked flatbread to a plate and cover with a clean kitchen towel or aluminum foil to keep warm. Repeat the cooking process with the remaining dough pieces. Enjoy warm with dips or as wraps!
Notes
- If you don’t have self-raising flour, use plain all-purpose flour but add baking powder to help the bread rise.
- Knead the dough well but avoid adding too much flour to keep the flatbreads soft and tender.
- The dough resting step helps to make the flatbread more pliable and easier to roll out.
- These flatbreads are best eaten warm but can be stored in an airtight container and reheated later.
- Try pairing the flatbread with hummus, whipped feta, or use them as wraps for a variety of fillings.
