Ingredients

Scale

Sausages

  • 1.10 lb Korean-style Vienna Sausages (or mini cocktail sausages)

Vegetables

  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, julienned
  • 1 garlic clove, minced

Sauce & Seasoning

  • 1 tbsp vegetable oil (or any neutral oil)
  • 1/2 tsp sesame seeds (optional garnish)
  • 3 tbsp ketchup
  • 1 tbsp gochujang
  • 1 tbsp honey (or maple syrup)
  • 1 tbsp regular soy sauce (or light soy sauce)
  • 0.5 tbsp sesame oil
  • 2 tsp white granulated sugar (or cane sugar)

Instructions

  1. Score the Sausages: Using a sharp knife, make 3-5 shallow cuts on one side only to 4 sausages at a time without slicing deeply to help them cook evenly and absorb flavors.
  2. Prepare the Sauce: In a small bowl, combine ketchup, gochujang, honey, soy sauce, sesame oil, and sugar. Stir until well mixed and set aside for later use.
  3. Cook Aromatics: Heat the vegetable oil in a large pan over medium heat. Add the julienned onions and minced garlic, stir-frying for about 30 seconds until fragrant but not browned.
  4. Cook Vegetables: Add the diced red and green bell peppers to the pan. Stir-fry for 30 to 60 seconds until they start to soften, maintaining some crispness.
  5. Add Sausages: Place the scored sausages into the pan and stir-fry with vegetables for 1 minute, allowing them to brown slightly.
  6. Simmer Covered: Cover the pan and cook for 3 to 4 minutes on medium heat, ensuring the sausages are heated through and flavors meld.
  7. Toss with Sauce and Serve: Pour the prepared sauce over the sausages and vegetables, tossing until everything is evenly coated. Sprinkle with optional sesame seeds for garnish. Remove from heat and serve immediately.

Notes

  • Shallow cuts on the sausages help release flavors without breaking the sausages apart.
  • Gochujang can be adjusted to taste for spiciness; reduce for milder flavor.
  • Substitute honey with maple syrup for a vegan-friendly option.
  • Serve with steamed rice or noodles for a fuller meal.
  • Sesame seeds garnish adds a nice crunch and visual appeal but can be omitted.
