Apple Cider Pancakes are fluffy, cozy, and full of fall flavor. Ingredients

Scale

Dry Ingredients

  • 2 cups (250 g) all-purpose flour
  • 2 tablespoons dark brown sugar, packed
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoons apple pie spice
  • ½ teaspoon kosher salt

Wet Ingredients

  • 1 cup (245 g) buttermilk, room temperature
  • ¾ cup (180 g) apple cider, room temperature
  • 2 large eggs, room temperature
  • 3 tablespoons unsalted butter, melted, slightly cooled
  • 1 teaspoon vanilla extract
  • 2 tablespoons Apple Cider Syrup, plus more for serving

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, dark brown sugar, baking powder, baking soda, apple pie spice, and kosher salt until evenly combined.
  2. Combine Wet Ingredients: In a separate bowl, whisk the buttermilk, apple cider, eggs, melted butter, vanilla extract, and Apple Cider Syrup until smooth and well combined.
  3. Make the Batter: Pour the wet ingredient mixture into the dry ingredients. Gently stir just until combined; a few lumps in the batter are acceptable. Let the batter rest for 5 minutes to hydrate the flour and thicken slightly while you heat your skillet.
  4. Heat Skillet: Lightly spray a nonstick skillet or griddle with cooking spray. Heat it over medium heat until it reaches about 300°F (149°C).
  5. Cook Pancakes: Using approximately ¼ cup of batter per pancake, pour onto the hot skillet. Cook for 2 to 3 minutes or until bubbles form on the surface and the edges appear set. Flip the pancakes and cook an additional 1 to 2 minutes until golden brown and cooked through.
  6. Serve Warm: Serve the pancakes immediately topped with warm Apple Cider Syrup for extra flavor and moistness.

Notes

  • Letting the batter rest helps produce fluffier pancakes by hydrating the flour.
  • Use room temperature ingredients for more consistent mixing and better texture.
  • Adjust cooking temperature as needed to prevent burning and ensure even cooking.
  • Apple Cider Syrup can be homemade or store-bought; it enhances the fall flavor.
  • These pancakes freeze well; reheat in a toaster or microwave for a quick breakfast.
