Instructions

  1. Prep and Preheat: Preheat your oven to 350 degrees F (175°C). Lightly spray your 2-cup glass bowls or oven-safe ramekins with a non-stick spray. Arrange the prepared bowls on a large baking sheet for stability and easy handling.
  2. The Blender Magic: In a high-powered blender, combine the cottage cheese, eggs, rolled old-fashioned oats, banana, maple syrup, baking soda, vanilla extract, and ground cinnamon. Blend until the mixture is completely smooth and creamy, which should take a few minutes. If too thick, add a little milk to reach your preferred consistency.
  3. Pour, Streusel & Blueberries: Evenly pour the batter into each prepared bowl, filling them more than halfway. In a small bowl, mix the streusel topping ingredients—rolled oats, brown sugar, and melted butter—and sprinkle this evenly on top of each bowl. Finally, add the blueberries on top. For best results, use frozen blueberries to prevent sinking; if using fresh, add them about 15 minutes into baking.
  4. Bake to Perfection: Place the baking sheet with the bowls into the preheated oven. Bake for 35 to 40 minutes, or up to 45 minutes depending on your oven. The bowls are done when the tops turn golden brown, puff up, and feel firm to the touch.
