Marinade and Chicken
- 1/2 cup olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 4 boneless, skinless chicken breasts (sliced or pounded thin)
Tomato Topping
- 1–2 cups cherry or grape tomatoes, halved
- 2 teaspoons olive oil
- 1 teaspoon balsamic vinegar
- Salt, to taste
- Black pepper, to taste
- Handful of fresh basil leaves, slivered
Finishing Touches
- 6–8 ounces fresh mozzarella, drained and patted dry
- Extra balsamic vinegar, basil, salt, and pepper for garnish
- Prepare the marinade. In a large bowl, whisk together olive oil, balsamic vinegar, lemon juice, Dijon mustard, garlic powder, salt, and pepper until smooth to create the marinade base.
- Marinate the chicken. If necessary, slice the chicken breasts lengthwise to make them thinner. Use a meat mallet to even out thickness if needed. Add chicken to the marinade, turning to coat evenly. Cover and refrigerate for at least 20 minutes or up to 8 hours for maximum flavor.
- Cook the chicken. Remove the chicken from the marinade, discarding the marinade. Grill the chicken over medium-high heat or sauté in a large skillet for 3-5 minutes per side, until cooked through and the internal temperature reaches 165°F (74°C). Transfer cooked chicken to a clean plate.
- Prepare the cheese and tomatoes. While the chicken cooks, drain the fresh mozzarella and pat dry with paper towels to remove excess moisture. Cut the cherry tomatoes in half and place them in a bowl.
- Marinate the tomatoes. Toss the halved tomatoes with olive oil, balsamic vinegar, salt, pepper, and slivered fresh basil. Adjust seasonings to taste.
- Assemble and serve. Top each cooked chicken breast with slices of mozzarella and spoon the balsamic tomato mixture over it. Garnish with extra basil, a drizzle of balsamic vinegar, and additional salt and pepper if desired. Serve immediately and enjoy!

- For even cooking, pound thicker chicken breasts to an even thickness before marinating.
