- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking.
- Prepare the Berry Filling: In a medium bowl, combine the mixed berries, granulated sugar, and vanilla extract. Stir gently to mix and set aside so the flavors meld.
- Roll Out the Puff Pastry: On a lightly floured surface, unroll each sheet of puff pastry and roll gently to smooth out any creases. Cut each sheet into 6 equal strips, giving you 12 strips total.
- Assemble the Twists: Spread a thin layer of softened cream cheese on half of each pastry strip. Then spoon a small amount of the berry mixture over the cream cheese. Fold each strip over and twist gently into a spiral, sealing the ends tightly to hold the filling inside.
- Bake the Twists: Place the twisted pastries onto the prepared baking sheet, spacing them evenly. Brush the tops with beaten egg and sprinkle with a little granulated sugar for a glossy, sweet finish.
