Banana Cake
- 2/3 cup butter, softened to room temperature
- 3 Tbsp sour cream
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups buttermilk
- 3 tsp vanilla extract
- 4 medium bananas, mashed (or 3 large bananas)
Cream Cheese Frosting
- 16 oz cream cheese, softened to room temperature
- 10 Tbsp butter, softened to room temperature
- 4 cups powdered sugar
- 3 tsp vanilla extract
- 2–4 Tbsp half & half (or heavy cream or milk)
- pinch of salt, to taste
Topping
- 1/2–3/4 cup Nilla wafers, crushed into crumbs
- Preheat and prepare pans: Preheat your oven to 350°F (175°C). Grease three 9-inch circular cake pans or line them with parchment paper to prevent sticking, then set aside.
- Cream butter and sour cream: In a stand mixer or using a hand mixer, beat the softened butter until light and fluffy, about 1-2 minutes. Add the sour cream and continue to beat until fully combined.
- Add sugars: Add the granulated sugar and brown sugar to the butter mixture. Cream together until the mixture is light, fluffy, and well combined.
- Incorporate eggs: Add the eggs one at a time, beating well after each addition to ensure a smooth batter.
- Sift dry ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.
- Combine dry and wet ingredients: Alternately add the dry flour mixture and buttermilk to the batter, beginning and ending with the flour mixture. Mix just until combined, it’s okay if some flour remains slightly unincorporated.
