Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the broken spaghetti and cook until just tender (al dente). Drain the pasta and rinse it thoroughly under cold water to stop the cooking process and cool the pasta completely. Set aside.
  2. Prepare the vegetables: While the pasta is cooling, chop all the vegetables—cherry tomatoes, cucumber, bell peppers, red onion, olives, and shredded carrots—and place them in a large mixing bowl, ensuring uniform sizing for balanced bites.
  3. Make the dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, sugar or honey, Dijon mustard, dried Italian seasoning, garlic powder, salt, and black pepper until the dressing is well combined and emulsified.
  4. Assemble the salad: Add the cooled spaghetti to the bowl with the prepared vegetables. Pour the dressing over the top and gently toss until all ingredients are evenly coated, allowing the pasta to absorb the flavors.
