Ingredients

Scale

Main Ingredients

  • 4 cups cold cooked white rice
  • 2 tbsp vegetable oil
  • 2 large eggs, beaten
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 cup frozen peas and carrots
  • 3 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 1/4 tsp ground white pepper
  • 2 green onions, sliced
  • 8 oz cooked protein (optional)

Instructions

  1. Scramble the Eggs: Heat 1 tablespoon of vegetable oil in a large skillet over high heat. Pour in the beaten eggs and scramble gently until they are softly set. Remove the scrambled eggs from the skillet and set aside on a plate.
  2. Sauté Aromatics and Vegetables: Add the remaining 1 tablespoon of oil to the skillet, then add the diced onion, minced garlic, and grated fresh ginger. Cook these aromatics for about 2 minutes until fragrant. Next, add the frozen peas and carrots and cook for an additional 1 minute.
  3. Cook the Rice: Add the cold cooked rice to the skillet, spreading it out in a thin layer. Stir-fry the rice over high heat for 4 to 5 minutes, allowing it to get golden spots and slightly crisp on the bottom. Stir in the soy sauce and ground white pepper evenly to flavor the rice.
  4. Combine and Finish: Return the scrambled eggs to the skillet along with the sliced green onions and toasted sesame oil. Toss everything together thoroughly to combine all flavors. Cook for another minute to heat through, then serve immediately.

Notes

  • Using cold cooked rice is key to preventing mushy fried rice; leftover rice from the day before works best.
  • Feel free to add your favorite cooked protein such as shrimp, chicken, or tofu to make this dish more filling.
  • Adjust soy sauce according to your salt preference for a milder or saltier taste.
  • For extra crunch, consider topping with chopped roasted peanuts or cashews.
  • To make it gluten-free, use tamari instead of regular soy sauce.
