4.9 from 57 reviews

Cottage Cheese Bread is a simple, flavorful, and easy gluten-free, high-protein bread made with just a handful of wholesome ingredients. This quick bread combines creamy cottage cheese, rolled oats, eggs, olive oil, and a touch of strawberry powder and lemon zest for a moist, tangy, and subtly sweet loaf. It requires minimal preparation, uses a food processor to blend the batter smoothly, and bakes in under an hour for a perfect breakfast, snack, or light dessert option.

Ingredients

Scale

Main Ingredients

  • 15 oz cottage cheese
  • 4 oz rolled oats
  • 4 eggs
  • 2 tablespoons olive oil or coconut oil
  • 1 tablespoon strawberry powder (optional)
  • 1 teaspoon lemon zest
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven: Preheat your oven to 350 degrees Fahrenheit to ensure it reaches the perfect temperature for baking the bread evenly.
  2. Prepare the loaf pan: Lightly butter or spray a 9-inch loaf pan with baking spray and set it aside to prevent sticking.
  3. Blend the batter: Combine all the ingredients in a food processor or blender. Blend until the mixture is smooth and well incorporated with no visible lumps.
  4. Bake the bread: Pour the batter into the prepared loaf pan. Bake at 350°F for 50 to 66 minutes. To check doneness, gently tap the bread – if it sounds hollow, it is fully baked.
  5. Cool the bread: Remove the bread from the oven and let it cool in the pan placed on a wire rack. Cooling helps the bread set properly.
  6. Serve: Slice the bread and serve plain or top with butter, jelly, or your favorite spread for added flavor.

Notes

  • You can double the recipe to make two loaves – try one plain and one flavored with strawberry and lemon.
  • For a chewier texture, substitute rolled oats with bread flour, all-purpose flour, whole wheat, oat flour, or almond flour for a gluten-free option.
  • Egg substitutes like flaxseed or chia seeds mixed with water can be used for egg-free versions.
  • Adding a scoop of protein powder increases the protein content.
  • To make the bread more cake-like, add a bit of sugar or honey.
  • If you don’t have cottage cheese, sour cream or Greek yogurt are good alternatives.
  • To store leftovers, refrigerate in an airtight container for up to 5 days or freeze wrapped tightly for up to 3 months.
  • Use parchment paper lining the loaf pan to prevent sticking and place the pan on a baking sheet to avoid excessive browning on the bottom.
  • If the bread browns too fast on top, cover loosely with aluminum foil during baking.
  • Allow the bread to cool completely for easier slicing, especially if making sandwich bread.
