Ingredients

Scale

Dry Ingredients

  • 95 g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 85 g dark or milk chocolate chips

Wet Ingredients

  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven and Prepare Tray: Preheat your oven to 160ºC (320ºF) with fan or 170ºC (338ºF) for conventional heating. Line a baking tray with parchment paper to prevent sticking and make cleanup easier.
  2. Melt Chocolate and Butter: In a heatproof bowl over simmering water, melt the chopped dark chocolate and butter together, stirring occasionally to blend them smoothly. Once melted, stir in the vanilla extract for flavor.
  3. Whisk Eggs and Sugars: In a separate bowl, whisk the eggs along with both the caster (or granulated) sugar and Demerara (or raw) sugar until the mixture becomes light and fluffy. This step incorporates air for better texture.
  4. Sift Dry Ingredients: Sift the plain flour, cocoa powder, baking powder, and salt into another bowl. Gently stir in the chocolate chips to disperse them evenly.
  5. Combine Chocolate and Egg Mixtures: Carefully fold the melted chocolate and butter mixture into the fluffy egg and sugar mix. Be gentle to preserve the airiness for a lighter texture.
  6. Incorporate Dry Ingredients: Gradually fold the sifted dry ingredients into the wet mixture until just combined, taking care not to overmix to maintain fudginess.
  7. Portion and Bake: Scoop tablespoons of batter onto the prepared baking tray, spacing them evenly. Bake in the preheated oven for 12–14 minutes until the tops are set with a crackly finish but the inside remains fudgy and chewy.
  8. Cool and Serve: Allow the browkies to cool on the baking tray for about ten minutes so they firm up slightly, then transfer them to a cooling rack to cool completely. Enjoy warm or at room temperature.

Notes

  • Using room temperature eggs helps to achieve a better, fluffier mixture.
  • Do not overbake; the browkies should be chewy and fudgy inside.
  • You can mix dark and milk chocolate chips or use one type according to preference.
  • For a nuttier flavor, consider adding chopped nuts like walnuts or pecans.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
