These fudgy keto brownies are a low-carb, quick, and budget-friendly treat perfect for satisfying your chocolate cravings without the sugar. Made with almond flour and sugar-free chocolate, they offer a rich, dense texture that’s perfect for a single serving and can be prepared either in the oven or microwave.

Ingredients

Scale

Brownie Ingredients

  • 35g fine almond flour
  • 45g sugar-free chocolate chips or chopped dark chocolate (85% cocoa)
  • 34g butter (or coconut oil for a vegan version)
  • 1 large egg (approx. 50-60g)
  • 18g erythritol or allulose
  • 1 pinch of salt
  • A few drops of vanilla extract
  • 1/4 tsp baking powder (optional)

Instructions

  1. Melt Chocolate and Butter: Gently melt the chocolate and butter together in a heat-resistant bowl using a water bath or microwave in 30-second intervals until fully melted and smooth.
  2. Mix in Egg: Lightly crack the egg and immediately stir it into the warm chocolate-butter mixture until smooth and well combined.
  3. Add Dry Ingredients: Stir in almond flour, sweetener (erythritol or allulose), salt, vanilla extract, and optionally baking powder. Mix until no white streaks remain, being careful not to overmix to preserve a fudgy texture.
  4. Oven Baking Option: Preheat the oven to 180°C (350°F) convection. Pour the batter into a small, parchment-lined baking tin and bake for 12-15 minutes, until the edges are set but the center remains slightly wobbly.
  5. Microwave Option: Pour the batter into a microwave-safe mug and cook on high for 60-90 seconds. Add an extra 15 seconds if needed.
  6. Cool and Set: Allow the brownies to cool for 5-10 minutes to firm up and achieve the ideal fudgy consistency before enjoying.

Notes

  • You can substitute butter with coconut oil to make this recipe vegan (ensure to use a flax or chia egg for vegan version).
  • Baking powder is optional; it slightly lifts the brownies but is not necessary for the fudgy texture.
  • Use chocolate that is at least 85% cocoa for a rich, keto-friendly flavor.
  • If using microwave method, cooking time may vary depending on the microwave wattage; monitor closely to avoid overcooking.
  • Make sure not to overmix the batter after adding almond flour to maintain the fudgy texture.
