Instructions

  1. Mix the Filling Ingredients: In the bowl of a stand mixer, combine the sweetened condensed milk, peppermint extract, and vanilla extract. With the mixer on low speed, gradually add half of the powdered sugar. Continue adding the remaining powdered sugar bit by bit until a stiff dough forms.
  2. Prepare the Dough: Sprinkle about 3 tablespoons of powdered sugar onto a piece of parchment paper. Knead the dough a few times on the parchment paper to ensure all ingredients are well combined. Roll the dough into a ½-inch thick circle, sprinkling powdered sugar on top to prevent sticking.
  3. Cut Out Patties: Use a 1 to 1 ½-inch cookie cutter or the top of a small glass to cut circles from the dough. If the dough becomes too warm or sticky to cut, place it in the freezer for 15 minutes and then continue. Place the cut peppermint patties on a parchment-lined baking sheet and freeze for 15 minutes.
  4. Melt the Chocolate: Melt the dark chocolate in the microwave by heating in 30-second increments, stirring well between each, until smooth. Let the melted chocolate cool slightly for 3 to 4 minutes to avoid melting the filling when dipping.
  5. Dip and Set Patties: Using a fork, dip each peppermint patty into the melted chocolate to coat it completely. Flip to cover both sides fully, then place back onto the parchment-lined baking sheet. If desired, sprinkle with decorative sprinkles while the chocolate is still wet.
