  • 1/2 cup (75g) Dill pickles (Diced, neon-green preferred)
  • 1/4 cup (40g) Pickled jalapeños (Sliced)
  • 2 tbsp (30ml) Pickle brine (From the jar)

Instructions

  1. Rice Preparation: Rinse the long-grain white rice thoroughly under cold water until the water runs clear to remove excess starch, ensuring the rice cooks fluffy and non-sticky.
  2. Cook Rice: In a medium pot, combine the rinsed rice with 3.5 cups of water. Cook over medium heat until the rice is tender and all the water is absorbed. Fluff the rice with a fork and set aside.
  3. Sear Sausage: Heat 1 tablespoon of vegetable oil in a cast-iron skillet over medium-high heat. Add the thick-cut smoked sausage rounds and sear them until the edges are dark brown and caramelized, developing a smoky and rich flavor. Remove the sausage from the skillet and set aside.
  4. Sauté Aromatics: In the same skillet with the remaining oil and sausage fat, add the diced white onions and crushed red pepper flakes. Sauté over medium heat until the onions become translucent and fragrant.
