Ingredients

Scale

Base Ingredients

  • ¾ cup butter (room temperature)
  • 1½ cups granulated sugar
  • 4 cups quick oats
  • ½ cup Light Karo Syrup
  • 3 tsp vanilla extract
  • ¼ tsp salt

Topping Ingredients

  • 1 cup chocolate chips (milk or semi-sweet)
  • ⅔ cup peanut butter (creamy or chunky)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350℉. Spray a 9×13-inch baking dish with non-stick cooking spray to prevent sticking.
  2. Cream Butter and Sugar: Using a stand mixer, cream together the room temperature butter and granulated sugar until the mixture is smooth and fluffy.
  3. Add Flavoring and Oats: Stir in the vanilla extract and Light Karo Syrup. Then gradually mix in the quick oats until everything is well combined.
  4. Press and Bake: Press the oat mixture evenly into the bottom of the prepared baking dish. Bake in the preheated oven for 15 minutes. Remove from oven and let cool for 20 minutes.
  5. Melt Chocolate and Peanut Butter: Melt the chocolate chips in the microwave in 25-second intervals, stirring between each interval until fully melted. Then stir in the peanut butter until smooth and combined.
  6. Spread Topping: Evenly spread the melted chocolate and peanut butter mixture over the cooled oat base. Allow the bars to set for about an hour until the chocolate topping is firm.
  7. Serve: Slice into 16 bars, serve, and enjoy your homemade O’Henry Bars!

Notes

  • You can use either creamy or chunky peanut butter depending on your texture preference.
  • If you prefer a richer flavor, opt for semi-sweet chocolate chips instead of milk chocolate.
  • Make sure the butter is at room temperature to ensure proper creaming with the sugar.
  • Press the oat mixture firmly into the pan to help bars hold together well after baking.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
