Cupcakes:

  • 3 cups cake flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 3/4 cup unsalted butter, at room temp
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups sour cream
  • 4 peaches, peeled, cored, and diced (small)

Frosting:

  • 8 ounces cream cheese, at room temp
  • 1/2 cup unsalted butter, at room temp
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Make the cupcakes: Preheat the oven to 350°F. Line 24 muffin cups with paper liners. Whisk together the cake flour, baking powder, baking soda, and salt. In a stand mixer, cream butter, granulated sugar, and brown sugar. Add eggs, vanilla, and sour cream. Combine dry ingredients with wet, fold in peaches. Bake for 18-22 minutes.
  2. Make the frosting: Cream cheese and butter until smooth. Beat in vanilla and powdered sugar until smooth. Spread on cooled cupcakes.
