Pistachio Pesto

  • 1/3 cup (40-45g) shelled pistachios
  • 2 cups (25-30g) parsley leaves and tender stems
  • 3 small garlic cloves, chopped
  • 1 medium lemon, zested and juiced
  • A pinch of salt
  • Freshly cracked black pepper, to taste
  • 1/4 cup (60 mL) extra virgin olive oil
  • 12 tablespoons water, plus more as needed

Seed Sprinkle

  • 1 tablespoon extra virgin olive oil
  • 1/2 cup (70g) pepitas
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon ground cumin
  • 1 teaspoon paprika
  • Pinch of cayenne pepper
  • 1/4 teaspoon kosher salt

Garnish

  • 1 small handful of flat-leaf parsley, roughly chopped (optional)

Instructions

  1. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 425°F (220°C). Place two rimmed sheet pans inside the oven to heat up for about 5 minutes. This ensures a hot surface for roasting.
  2. Prep the Carrots and Onions: Depending on the thickness of your carrots, cut them accordingly: bisect medium ones lengthwise, quarter fat carrots lengthwise, or leave skinny carrots whole. Then cut them into 2-inch diagonal pieces. Toss the carrots and red onion wedges with 3 tablespoons of olive oil, and season generously with kosher salt and freshly cracked black pepper.
  3. Roast the Vegetables: Carefully transfer the carrots and onions to the heated sheet pans, spreading them out evenly. Roast for 20 to 25 minutes, tossing halfway through; use 20 minutes if carrots are skinny. The roasting develops caramelized edges and soft interiors.
  4. Add and Roast Dates: Scatter the chopped dates over the roasting vegetables, then continue roasting for an additional 5 to 8 minutes. This step softens and caramelizes the dates and ensures all components are tender and flavorful.
  5. Make the Pistachio Pesto: In a food processor, pulse the pistachios until broken into small pieces. Add the parsley, chopped garlic, lemon zest and juice, pinch of salt, and black pepper to taste. Blend until a paste forms. With the motor running, slowly drizzle in 1/4 cup olive oil to create a sauce. Scrape the sides as needed and add more oil if necessary to achieve a smooth, thick consistency. If the pesto is too thick, add water one tablespoon at a time until creamy and spoonable. Adjust seasoning to taste.
  6. Prepare the Seed Sprinkle: Heat a small or medium frying pan over medium heat. After heating for a minute, add 1 tablespoon olive oil followed by pepitas, red pepper flakes, ground cumin, paprika, cayenne pepper, and 1/4 teaspoon kosher salt. Stir continuously for 2 to 2 1/2 minutes until the pepitas are golden and begin popping. Remove from heat and spread on a plate to cool, ensuring an even coating of spices.
  7. Assemble the Dish: Spoon a layer of pistachio pesto onto a serving platter. Lay the roasted carrots, onions, and dates on top of the pesto. Scatter the spiced pepita seed sprinkle over the dish.
