Ingredients

Scale

Sauce

  • ⅓ cup low-sodium soy sauce (or coconut aminos for gluten-free)
  • 1 tablespoon rice vinegar
  • 4 cloves garlic, minced
  • 2 teaspoons fresh grated ginger
  • ¼ teaspoon crushed red pepper flakes
  • 2 teaspoons toasted sesame oil

Main

  • 1 tablespoon avocado oil
  • 1 pound lean ground turkey (93% lean)
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 10 ounces fresh Brussels sprouts, shredded (pre-shredded works well)

Garnish (optional)

  • Chopped green onions
  • Sesame seeds

Instructions

  1. Prepare the sauce: In a measuring cup, combine the soy sauce, rice vinegar, minced garlic, grated ginger, crushed red pepper flakes, and toasted sesame oil. Whisk together and set aside.
  2. Heat the skillet and brown turkey: Warm avocado oil in a large skillet over medium-high heat. Once hot, add the ground turkey, season with salt, pepper, and onion powder. Cook, breaking it apart as it browns, until mostly cooked but still a little pink, about 4 to 5 minutes.
  3. Add Brussels sprouts: Stir the shredded Brussels sprouts into the skillet with the turkey. Continue cooking until the turkey is fully cooked and the Brussels sprouts have softened, about 5 to 6 more minutes.
  4. Add the sauce and simmer: Pour the soy sauce mixture over the turkey and Brussels sprouts. Reduce the heat to medium and let everything simmer together for 5 minutes so the flavors meld and the vegetables finish cooking.
  5. Serve: Divide the skillet mixture into 4 bowls. Serve over cooked rice if desired, and garnish with chopped green onions and sesame seeds.

Notes

  • Use pre-shredded Brussels sprouts for convenience, or shred your own using a food processor or knife.
  • Make sure to pick out any tough larger stems from the shredded Brussels sprouts for a better texture.
  • This recipe reheats well, making it great for meal prep and lunches.
  • Adjust red pepper flakes to your preferred level of heat.
  • Serve with steamed rice or cauliflower rice for a low-carb option.
