Instructions

  1. Prepare the potatoes: Place the peeled and quartered Yukon gold potatoes in a large pot and cover them with cold water, ensuring the water level is about 1 inch above the potatoes. Add 2 teaspoons of salt to the water.
  2. Cook the potatoes: Bring the pot to a rolling boil over high heat. Once boiling, reduce the heat to medium-low and let the potatoes simmer gently for about 15 minutes, or until they become very tender when pierced with a fork.
  3. Warm the dairy mixture: Approximately 5 minutes before the potatoes finish cooking, combine whole milk, heavy cream, and unsalted butter in a small saucepan. Heat over low heat until the butter is fully melted, then keep this mixture warm on low heat until ready to use.
  4. Drain and mash the potatoes: Drain the cooked potatoes thoroughly and return them to the hot pot to let excess moisture evaporate for a minute. Pour the warm milk, cream, and butter mixture over the potatoes, add the room temperature sour cream, and mash using a potato masher until smooth but not overworked to avoid a gluey texture.
  5. Add horseradish and season: Stir in 2 to 3 tablespoons of horseradish, adjusting to your taste preference. Mix just until combined to maintain texture.
