Steak Bites
- 3 (8oz) rib eye steaks, cut into bite-sized cubes
- 2 tbsp olive oil
- 2 tbsp butter
- 5 cloves garlic, minced
- 2 tbsp alcohol-free Worcestershire sauce
- 1/4 cup beef broth
- 1 tsp sea salt
- 1 tsp cracked black pepper
- Fresh thyme sprigs
Caramelized Onions
- 2 large Vidalia sweet onions, thinly sliced
- 2 tbsp olive oil
- 2 tbsp butter
- Prepare the Onions: Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the thinly sliced Vidalia onions and cook slowly, stirring occasionally, until they turn soft, golden, and caramelized, about 20-25 minutes. Remove from the skillet and set aside.
- Sear the Garlic and Steak: Pat the rib eye steak cubes dry with paper towels. Season them thoroughly with sea salt and cracked black pepper. In the same skillet, add 2 tablespoons olive oil and 2 tablespoons butter over high heat. Add the minced garlic and sauté briefly until fragrant, about 30 seconds. Add the steak cubes in batches to avoid overcrowding, searing them for 2-3 minutes per side until a browned crust forms but the inside remains tender. Remove the steak and set aside to rest for 3 minutes.
- Create the Flavorful Sauce: Deglaze the skillet with the beef broth and alcohol-free Worcestershire sauce, scraping up any browned bits from the pan. Let the mixture simmer for 2-3 minutes until slightly reduced and thickened.
- Combine and Serve: Return the caramelized onions and steak bites to the skillet, tossing everything together with fresh thyme sprigs to coat in the savory sauce. Cook together for 1-2 minutes until heated through. Serve immediately, while the steak is juicy and flavorful.
Notes
- Patting the steak dry before seasoning helps develop a better crust.
- Cook steak in batches to prevent steaming and ensure proper searing.
- A cast-iron skillet is ideal for heat retention and crust development.
- Allow steak bites to rest for 3 minutes before serving to lock in juices.
