Ingredients

Scale

Brown Butter Base

  • 170 g Unsalted butter (to make 140 g brown butter)
  • 75 g Brown sugar
  • 75 g Granulated sugar
  • 1 Egg (at room temperature)

Dry Ingredients

  • 185 g All-purpose flour
  • 1 Teaspoon Salt
  • 1 Teaspoon Baking soda

Mix-ins and Toppings

  • 85 g Butterscotch chips
  • 85 g Dark chocolate chips
  • 75 g Pecans (set aside 10 whole pecans for topping, chop the rest)
  • Small amount of melted chocolate for decorating

Instructions

  1. Make Brown Butter: Place the butter in a saucepan over medium heat. Melt and continue to cook, stirring frequently, until the milk solids sink and turn golden brown, giving off a nutty aroma. Remove from heat just before burning and let the butter cool to room temperature.
  2. Mix Sugars and Butter: Use an electric hand mixer to whip the cooled brown butter with both sugars for several minutes until the mixture is light and airy.
  3. Add Egg: Mix in the room-temperature egg with the mixer and whip for about one minute until smooth and fully combined.
  4. Combine Dry Ingredients: Sift together the flour, salt, and baking soda. Fold these dry ingredients gently into the wet mixture with a rubber spatula, stirring just until combined to avoid overmixing.
  5. Incorporate Chips and Nuts: Fold in butterscotch chips, dark chocolate chips, and chopped pecans. Reserve some chips and pecans to sprinkle on top before and during baking.
  6. Prepare Baking Sheets: Line two baking sheets with parchment paper. Divide the dough into 10–12 equal portions using a digital scale or ice cream scoop, spacing them well. Place one whole pecan on each dough portion. To ensure even baking, limit to 5–6 cookies per batch.
  7. Chill Dough and Preheat Oven: Refrigerate the dough balls for one hour. Near the end of chilling, preheat the oven to 350°F (175°C), with no fan.
  8. Top and Bake: Just before baking, press additional chocolate chips and chopped pecans on the dough’s surface. Bake for 10 minutes at 350°F (175°C), then add the remaining chips and pecans on top and bake for an additional 5 minutes.
  9. Shape Cookies: If the cookies spread during baking, immediately use a round cookie cutter to gently reshape the edges while hot.
  10. Cool Cookies: Allow the cookies to rest briefly in the pan, then transfer them to cool completely on a wire rack.
  11. Decorate: Melt a small amount of chocolate and drizzle thin stripes over the cooled cookies for decoration.
  12. Storage and Freezing: Store cooled cookies in an airtight container at room temperature for 4–5 days, away from sunlight. For freezing, shape unbaked dough into balls, freeze solid on parchment, then store in a freezer-safe bag for up to 2 months. Bake from frozen by adding 1–2 minutes to baking time. Freeze baked cookies separated by parchment paper in an airtight container for up to 2 months. Thaw at room temperature before serving.

Notes

  • Use room-temperature egg for better mixing and texture.
  • Watch the brown butter carefully; it can burn quickly once the solids brown.
  • Chill dough before baking to prevent excessive spreading and enhance flavor.
  • Bake cookies in small batches for even heat distribution and best results.
  • Use whole pecans on top for a visually pleasing presentation and texture contrast.
  • Adding chocolate drizzle elevates flavor and adds a professional touch.
  • Freeze dough balls to enjoy fresh-baked cookies anytime.
