  • 4 salmon fillets (about 6 oz each)
  • 1 tsp parsley, finely chopped (about 1/8-inch pieces)
  • 1/2 tsp fresh dill, finely chopped

Instructions

  1. Prepare Spice Rub and Glaze: In a small bowl, combine paprika, chili powder, garlic powder, onion powder, salt, pepper, and 1 tsp lemon zest. In another bowl, whisk together mustard, honey, and lemon juice until smooth to make the honey mustard glaze. Having these ready before grilling ensures a smooth cooking process.
  2. Season Salmon: Pat salmon dry with paper towels to remove moisture for better spice adherence and browning. Rub olive oil on both sides of the salmon, then generously coat the flesh side with the spice rub, pressing gently to adhere. Let the seasoned salmon rest at room temperature for 10-15 minutes to enhance flavor.
