Ingredients

Scale

For the Rolls

  • 1012 Spring Roll Wrappers
  • 2 cups Mixed Vegetables (bell peppers, carrots, zucchini), finely chopped
  • ½ cup Cream Cheese, softened
  • 1 cup Cheddar Cheese, shredded
  • ½ cup Parmesan Cheese, grated
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Pepper, to taste

For Garnish

  • Fresh Herbs (parsley or basil)

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and allow for easy cleanup.
  2. Prepare the Filling: Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until it becomes fragrant. Then, stir in the finely chopped mixed vegetables, season with salt and pepper, and cook for 5 to 7 minutes until the vegetables soften. Remove from heat and allow the mixture to cool slightly.
  3. Mix the Cheese Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and grated Parmesan cheese until well blended. Fold the sautéed vegetables into the cheese mixture, ensuring an even distribution of ingredients.
  4. Assemble the Rolls: Lay one spring roll wrapper flat on a clean surface with one corner pointing towards you. Spoon 2 to 3 tablespoons of the cheese and vegetable filling near the corner closest to you. Fold the bottom corner over the filling, then fold in the sides to encase the filling, rolling tightly to seal. Repeat this process with the remaining wrappers and filling.
  5. Bake the Rolls: Arrange the assembled rolls seam-side down on the prepared baking sheet. Lightly brush the tops of the rolls with olive oil to promote browning and crispiness. Bake the rolls in the preheated oven for 20 to 25 minutes, or until they are golden brown and crispy on the outside.
  6. Serve: Remove the rolls from the oven and let them cool slightly. Garnish with fresh parsley or basil before serving to add a fresh and vibrant flavor.

Notes

  • You can substitute mixed vegetables with your favorites such as mushrooms, spinach, or corn.
  • For extra crispiness, you may brush the rolls with a beaten egg wash instead of olive oil.
  • Serve with marinara sauce or a dipping sauce of your choice for added flavor.
  • These rolls can be made ahead and baked just before serving.
