Chicken Tikka
- 500 g chicken cut into bite-sized pieces
- 1 cup yogurt
- 1 tbsp cumin powder
- 1 tbsp coriander powder
- 1 tsp chili powder
- 1 tsp chaat masala
- Juice of 1 lemon
Paratha Rolls
- Frozen or homemade parathas
Chutney
- 1/2 cup cilantro
- 1/2 cup yogurt
- Water as needed for consistency
Vegetables and Garnish
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- Fresh cilantro for garnish
- Pinch of kasoori methi (optional)
- Marinate the Chicken: In a mixing bowl, combine the bite-sized chicken pieces with yogurt, cumin powder, coriander powder, chili powder, chaat masala, and lemon juice. Mix thoroughly ensuring all pieces are well coated. Cover and let the chicken marinate for at least 1 hour to absorb the spices and tenderize.
- Cook the Chicken: Heat a pan or grill over medium heat. Cook the marinated chicken pieces for 10-12 minutes, turning occasionally until they are golden brown and cooked through. The exterior should have slight char marks for authentic flavor.
- Prepare the Chutney: Using a blender or food processor, combine the cilantro, yogurt, and water until smooth. Adjust the consistency with more water if needed and season to taste with salt. This chutney will add a fresh, tangy element to the rolls.
- Cook the Parathas: Heat the frozen or homemade parathas on a hot pan or tawa until golden and flaky on both sides, following the package instructions or your homemade method.
- Assemble the Rolls: Lay a warm paratha flat and spread a generous layer of cilantro-yogurt chutney on it. Add the cooked chicken tikka pieces evenly across the paratha and top with thinly sliced onion, bell pepper, and fresh cilantro. Optionally sprinkle kasoori methi for added aroma.
- Roll and Serve: Tightly roll up the paratha with the filling inside. Serve the rolls warm as a main course or snack, perfect for a flavorful and convenient meal.
Notes
- Marinating the chicken for at least 1 hour enhances the flavor and tenderness.
- Use fresh cilantro for chutney to get the best vibrant color and taste.
- You can substitute chaat masala with garam masala if unavailable.
- Cook parathas on medium heat to achieve a crispy yet soft texture.
- For a spicier roll, add extra chili powder or fresh green chilies to the marinade.
- The rolls can be served with additional yogurt or mint chutney on the side.
