  • 1 pound dry penne pasta (you can also use rigatoni, ziti, cavatelli, etc)
  • 1 tablespoon olive oil
  • ½ cup diced onion
  • 1 tablespoon minced garlic (about 3 cloves)
  • 2 tablespoons vodka (or ½ teaspoon white wine vinegar)
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • ½ teaspoon dried basil leaves (or ¼ cup of fresh chopped basil)
  • ½ cup grated parmesan cheese
  • ¼ cup pasta water

Instructions

  1. Step 1: Bring a large pot of water to a boil for your penne pasta.
  2. Step 2: While the water is coming to a boil, blend the crushed tomatoes and cottage cheese on high for 30 seconds or until smooth, creating a creamy pink sauce. Set aside.
  3. Step 3: Add olive oil to a sauté pan and preheat over medium heat for about 3 minutes.
  4. Step 4: Finely chop the onions and garlic while the pan heats.
  5. Step 5: Add the onions and garlic to the pan and sauté on medium-low heat for 3-5 minutes until softened and translucent.
  6. Step 6: Pour in the vodka and cook until the alcohol smell dissipates, about 5 minutes.
  7. Step 7: Stir in the tomato and cottage cheese mixture, salt, pepper, and basil. Simmer on medium heat.
  8. Step 8: Add the pasta to the boiling water and cook until al dente according to package instructions.
  9. Step 9: Before draining, reserve ¼ cup of the pasta cooking water.
