Dry Ingredients
- 3 cups old-fashioned rolled oats
- 1 cup raw almonds, roughly chopped
- 1/2 cup pepitas
- 1/2 cup unsweetened coconut flakes
- 1/2 teaspoon fine sea salt
- 1 teaspoon ground cinnamon
Wet Ingredients
- 1/2 cup honey
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
Optional Add-ins
- 1/2 cup dried fruit (optional)
- Preheat and Prepare Pan: Heat your oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper to prevent sticking and ensure even baking.
- Mix Dry Ingredients: In a large bowl, combine the rolled oats, roughly chopped almonds, pepitas, unsweetened coconut flakes, fine sea salt, and ground cinnamon thoroughly to distribute all flavors.
- Combine Wet Ingredients: In a separate small bowl, whisk together the honey, melted coconut oil, and vanilla extract until the mixture is smooth and well incorporated.
- Combine Wet and Dry Mixtures: Pour the honey mixture over the dry ingredients. Stir well until all the oat and nut mixture is fully coated in the honey mixture, then press evenly into the prepared baking sheet to form a compact layer.
- Bake Granola: Bake in the preheated oven for 20 minutes. After 20 minutes, rotate the pan to ensure even baking, then continue baking for an additional 10 to 15 minutes until the granola is deep golden in color.
- Cool and Add Dried Fruit: Remove the pan from the oven and allow the granola to cool completely on the baking sheet without stirring. Once cooled, break the granola into clusters. If desired, toss in the dried fruit to incorporate.
Notes
- Pressing the granola mixture firmly into the pan helps create clusters instead of loose granola.
- For a nuttier flavor, you can toast the almonds and pepitas lightly before mixing.
- Store granola in an airtight container at room temperature for up to two weeks for freshness.
- Feel free to substitute honey with maple syrup for a vegan option, but it may alter the flavor slightly.
- Using parchment paper simplifies cleanup and prevents sticking.
