Matcha Cream
- 1/3 cup granulated sugar
- 1 cup mascarpone cheese (room temperature)
- 1 1/2 cup heavy whipping cream
- 2 teaspoons matcha powder (ceremonial grade – sifted)
- 1 teaspoon pure vanilla extract
Matcha Soak
- 2 teaspoons matcha powder (ceremonial grade – sifted)
- 1 tablespoon granulated sugar
- 1/2 cup hot water

- Prepare the mascarpone cheese: Add the softened mascarpone cheese to a large bowl and whisk until smooth and silky. Set aside.
- Whip the cream: In another large mixing bowl, combine heavy whipping cream, 2 teaspoons matcha powder, and vanilla extract. Using an electric mixer fitted with a whisk attachment, whip the cream until medium peaks form, careful not to overwhip.
- Combine mascarpone and whipped cream: Gently fold the whipped cream into the mascarpone mixture using a spatula until fully combined with no streaks remaining. Set aside.
- Make the matcha soak: In a shallow bowl, whisk together 2 teaspoons matcha powder, granulated sugar, and hot water with a matcha whisk until slightly frothy, about 30 seconds.
- Soak the ladyfingers: Quickly dip each ladyfinger into the matcha soak just enough to coat both sides. Shake off excess liquid and arrange them evenly in the bottom of a glass container to form the first layer.
- Add fresh strawberries: Place a layer of fresh strawberry slices evenly over the ladyfingers.
- Layer the matcha mascarpone cream: Spread a generous layer of the prepared matcha mascarpone cream over the strawberry layer, smoothing the surface with a spatula.
- Layer strawberry sauce: Pour and spread a layer of strawberry sauce over the cream layer.
- Repeat layering: Repeat the layers of soaked ladyfingers, strawberries, matcha mascarpone cream, and strawberry sauce as desired to fill the container.
- Chill the tiramisu: Cover the assembled dessert and refrigerate for at least 4 hours, preferably overnight, allowing the cream to firm and the ladyfingers to soften thoroughly.
- Top and serve: Just before serving, dust the top of the tiramisu with 2 teaspoons of sifted matcha powder for an elegant finish.
