Ingredients

Scale

Graham Cracker Crust

  • 1 ¾ cups graham crackers, finely ground
  • 1/3 cup sugar
  • 7 tablespoons butter, melted
  • 1/2 teaspoon vanilla
  • Pinch of sea salt

Cheesecake Filling

  • 16 ounces full fat cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup sugar
  • 1/3 cup confectioners sugar
  • 1/3 cup sour cream
  • 2 teaspoons vanilla extract

Caramel Apple Topping

  • 4 small to medium apples, cored and thinly sliced (skin removed if desired)
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon corn starch
  • 1/3 cup caramel sauce (plus extra for topping)

Instructions

  1. Prepare the Graham Cracker Crust: In a small bowl, combine the melted butter, finely ground graham crackers, vanilla, sugar, and a pinch of sea salt. Mix well until fully combined. Press the mixture firmly into the bottom of an 8 or 9 inch springform pan or pie pan, using a measuring cup to compress the crust tightly. Place the crust into the freezer to set for about 2 hours or until ready to add the filling.
  2. Make the Cheesecake Filling: Using a stand or hand mixer, whip the heavy cream on medium speed until stiff peaks form, which takes about 4-5 minutes. In a separate bowl, beat the softened cream cheese with sugar until creamy and smooth. Incorporate the vanilla extract, sour cream, and confectioners sugar into the cream cheese mixture and mix well. Gently fold the whipped cream into the cream cheese mixture until fully blended.
  3. Assemble the Cheesecake: Pour the cream cheese filling over the chilled graham cracker crust, spreading it evenly with a spatula. Refrigerate for at least 4 to 6 hours to allow the cheesecake to set properly; for best results chill overnight or up to 12 hours.
  4. Cook the Caramel Apple Topping: In a skillet over medium heat, melt the butter. Add the thinly sliced apples and cook, stirring frequently, until the apples soften, about 5-6 minutes. Sprinkle the corn starch, brown sugar, cinnamon, and vanilla over the apples and stir to combine. Allow the corn starch to dissolve completely. Remove from heat and stir in the caramel sauce. Transfer the apple mixture to a bowl and refrigerate until cooled.
  5. Add the Topping and Serve: Once the cheesecake is set and the apple topping is chilled, spoon the caramel apple mixture evenly over the cheesecake. Drizzle extra caramel sauce on top if desired. Slice and serve immediately. Enjoy your rich, creamy no-bake caramel apple cheesecake!

Notes

  • For a firm crust, press the graham cracker mixture very firmly and allow it to chill well before adding the filling.
  • Make sure the cream cheese is softened to room temperature for smooth mixing.
  • Chill the cheesecake for at least 4 hours; overnight chilling yields the best texture and sliceability.
  • Peeling the apples is optional; peeling will give a softer texture while unpeeled adds color and texture.
  • Use a non-stick skillet for cooking the apples to prevent sticking.
  • This dessert is best served chilled and should be stored in the refrigerator.
